What miso glazed salmon is
This is saikyō-yaki: fish marinated in sweet white miso from Kyoto, then grilled. The miso seasons the fish and firms its texture. It is a classic of Japanese home cooking and the version most Western restaurants are imitating when they put black cod on a menu at four times the price.
Want this cooked in your kitchen?
A chef comes to you and batch-cooks miso glazed salmon into four portions, alongside one or two other dishes, and leaves it portioned in your fridge. From £100 a visit.

Salmon marinated in white miso, mirin and sake, then grilled, served with sesame-fried tenderstem broccoli.
How it keeps, and how to reheat it
The shortest-lived dish on our menu: eat within 2–3 days. That is a fish thing, not a cooking thing. Reheat gently and briefly, or eat it cold. Miso-glazed salmon is genuinely good straight from the fridge.
If you're doing the shopping
On the hybrid and you-shop options you buy the fresh ingredients. For four portions of miso glazed salmon, that's:
- 4 salmon fillets (approx 400g)
- tenderstem broccoli (1 pack, approx 200g)
- 1 garlic clove
- cooking oil
- sesame oil
We bring the Japanese pantry (rice, cooking sake, miso, soy, dashi, mirin and the rest) on every option except you-shop. Compare the options.
