What chicken teriyaki is

Teriyaki is a cooking method rather than a sauce off a shelf: teri means the gloss, yaki means grilled. Chicken is cooked and then glazed in a reduction of soy, mirin and sake until it takes on a shine. Done properly it is savoury and faintly sweet, not the thick syrup most British takeaways use.

How we make it

We use chicken thigh rather than breast, and make the teriyaki sauce ourselves rather than pouring it from a bottle. It comes with sesame green beans. It is the most requested dish we make.

How it keeps, and how to reheat it

Keeps 3–4 days in the fridge and freezes well. The glaze thickens as it cools, which is normal. Reheat in a covered pan over a low heat with a splash of water, or in the microwave. This one is forgiving either way.

If you're doing the shopping

On the hybrid and you-shop options you buy the fresh ingredients. For four portions of chicken teriyaki, that's:

We bring the Japanese pantry (rice, cooking sake, miso, soy, dashi, mirin and the rest) on every option except you-shop. Compare the options.

Questions about chicken teriyaki

This version is 830 kcal and 50g of protein a portion, made with thigh meat and served with green beans. The sauce is made from soy, mirin and sake rather than a shop-bought glaze, so there is far less sugar in it than a takeaway equivalent.
Yes, just say so when you book. We default to thigh because it stays tender when it is cooked, cooled and reheated a few days later, which breast tends not to do.
It does, and it is one of the better dishes on the menu for it. Freeze it in a portion-sized container and defrost in the fridge overnight before reheating.
